15-minute food: the better-sleep dinner

Chicken cooked with beer and brown rice

by Tristan Welch, head chef at Launceston Place, London

Ingredients

2 chicken breasts
2 bunches small carrots
1 bunch radish
200g brown rice
1 bottle wheat beer
250ml chicken stock
1 bay leaf
Butter

The 15-minute method

0-2mins Take an ovenproof pan and place on a medium-high heat to melt the butter. Season the chicken and brown on all sides.
2-4mins Remove from the pan, fry the vegetables for 1 minute, then add the chicken and the cooked brown rice.
4-14mins Pour in the beer. When it boils, add the chicken stock. Place a lid on the pan and cook in an oven at 150°C for 10 minutes.
14-15mins Place the chicken on the brown rice and vegetables. The alcohol will have boiled off, so if you’ve had a tough day, you may want to crack open another.

Warning!

Keep in mind that cooking times may vary according to the size and weight of the meat you have chosen. Always check the meat is cooked through before you eat it. Food poisoning is not a recommended weight-loss strategy.

Your body’s benefit

“A good dinner should give you carbs, protein and good fats, keeping your blood sugar and muscles well supported. This allows your body to recover from a day of work and exercise,” says sports nutritionist Trevor Bedding. “Chicken and turkey are convenient sources of low-fat lean protein and raise your serotonin levels to promote healthy sleep.”
